Primo and Scilla, two dedicated truffle-hunting dogs, led the way into the heart of the woods near Amandola, central Italy. They traversed a gurgling brook, navigated a muddy slope, crossed moss-covered tree limbs, and pushed through tangled brambles and vines, all while diligently scouring acres of terrain. Their mission: to unearth white truffles, a prized delicacy with skyrocketing prices, primarily due to the looming threat of climate change.
The white truffle, gram for gram, stands as one of the world’s most costly foods. In Italy, fresh white truffles can command prices as high as 4,500 euros per kilogram (or nearly $2,200 per pound), according to Coldiretti, Italy’s largest agricultural trade group. When finely shaved onto a plate of risotto or roast quail in renowned restaurants worldwide, the price soars even higher, earning them the moniker “white gold.” For instance, Acquerello in San Francisco offers a $495 truffle tasting menu (excluding wine and tax), and truffle enthusiasts in London and Dubai can expect similarly extravagant bills.
In the previous year, at an auction in Alba, Italy, a one-and-a-half-pound white truffle specimen fetched an astonishing record price of €184,000 (nearly $200,000). Despite supply limitations, prospective buyers are gearing up to converge on Alba, Italy’s truffle hub, for another bidding frenzy.
Experts in the world of truffles predict that with increasingly extreme weather patterns, a diminishing woodland habitat, and relentless demand, exorbitant prices will become the new norm.
The Tuber magnatum Pico, or white truffle, has always proven elusive to locate. While scientists have made some strides in cultivating truffles in farms, these efforts are insufficient to satisfy the growing craving of truffle enthusiasts. In Italy, these prized fungi flourish in specific locations, often colonizing near the roots of oak, beech, and poplar trees.
Truffles not only draw sustenance from their woody companions but also contribute to their well-being. Under the right conditions of moisture and cool air, truffles mature and develop underground, emitting signals to dogs and woodland creatures that guide them to their location.
During a recent truffle hunt in the woods near Amandola, Alessio Galiè, a 38-year-old truffle hunter, proudly recounted his past discoveries, including the six truffles he had unearthed earlier in the week. Meanwhile, Primo and Scilla diligently scoured the ground with noses attuned to the task. Occasionally, they caught the scent of a potential find, and the anticipation of a successful discovery hung as thick as the morning mist.
